When canceling unstakings, funds still in the waiting period are re-staked with the same resource type. Matured unstakings cannot be canceled; those funds are automatically withdrawn to the owner's account. Use wallet/gettransactioninfobyid to query the canceled amount (cancel_unfreezeV2_amount) and the withdrawn amount (withdraw_expire_amount). The getUnfreezeDelayDays chain parameter defines the waiting period.
